Baked Mackerel with Caramelized Onions, Peas and Cream
Serves 2
INGREDIENTS
1/2 - lb Chatham Harvesters Mackerel Filets
1 small onion
1/2 cup of peas (frozen)
1/4 cup heavy cream
1 T + 1/2 T Olive oil
1 T Butter
1/4 teaspoon Salt
Salt and pepper to taste
DIRECTIONS
Preheat the oven to 375°F.
Remove the thawed fish from its package and season the flesh side with salt and pepper.
Spread 1/2 tablespoon of oil in a baking pan, place the fish in the pan, and bake for 20–25 minutes, or until the internal temperature of the fish reaches 145°F.
While the fish is baking:
Remove the peas from their package and set aside to slightly thaw.
Peel and thinly slice one small onion.
Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a sauté pan over medium-high heat. Add the onions and a pinch of salt.
Reduce the heat to medium and cook, stirring occasionally, until the onions are browned.
Once the onions are browned, lower the heat to medium-low and stir in the peas. Cover and cook for 2–3 minutes.
Stir in the cream, scraping up any browned bits from the bottom of the pan. Salt and pepper to taste. Leave the mixture on low heat until the fish finishes cooking.
To serve:
Remove the fish from the oven and transfer it to a platter.
Spoon the onion, pea, and cream mixture over the fish.
Serve with rice.
