Fried Mackerel | A simple summer supper

Fried mackerel makes for a delightful and straightforward summer supper. Picture this: tender fillets of mackerel, their skin crisped to a golden brown, and the flesh i perfectly flaky and moist.

And served with garden tomatoes and a mustard aioli it's a meal is not only quick and easy but also packed with flavor and perfect for enjoying on a warm evening.


FRIED MACKEREL

Ingredients

1 pound mackerel filets

1/4 cup of flour

salt and pepper

3 tablespoons of butter


Directions

Remove mackerel from packaging, rinse and pat dry with a paper towel. Salt and pepper the filets. Place 1/4 of flour on a plate . Melt 3 tablespoons of butter in a medium high skillet (be sure to keep the butter from burning).


Dredge the mackerel in the flour and shake off excess. Place in skillet , skin side down and cook approximately 3 minutes on both sides.


Remove from pan and place on wire rack or paper towel to drain any excess butter. Serve immediately with sliced garden tomatoes and an mustard aioli - see recipe below.


Mustard Aioli


Ingredients

1/8 cup of coarse ground mustard

1/8 cup of mayonnaise

1/8 teaspoon each of salt and pepper

1/2 T lemon juice


Directions

Combine all ingredients and mix well. Chill for 10 minutes and serve with fish and tomatoes
