Fried Day Boat Sea Scallops are a decadent treat, especially during the season when seafood restaurants open and the air is filled with the tantalizing aroma of fried delights. At Harvesters Kitchen, the crew occasionally gets a craving for fried food, and what better way to satisfy it than with a batch of homemade fried scallops?
To start, we grabbed a pound of our locally sourced day boat sea scallops from the freezer. After thawing them overnight in the refrigerator, we were ready to embark on our frying adventure , eager to demonstrate how simple it can be to make delicious fried scallops in your own kitchen.

Ingredients
4 cups vegetable oil
1 lb scallops
½ cup flour
½ cup cornstarch
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon paprika
½ teaspoon pepper
2 large eggs
¼ cup water
1 ½ cup bread crumbs
lemon and tarter sauce for dipping and garnishing.
Directions
Rinse and pat scallops dry.
In one bowl combine flour, cornstarch, and seasoning. In a second bowl whisk eggs and water, and in a third bowl place bread crumbs.
Dip scallops in the flour mixture, then the eggs, then the bread crumbs.
Heat oil to about 345-350 degrees then fry the scallops about 3 minutes- they cook fast. Depending on how big of a pot/wok you have you will probably want to work in batches to fry the scallops.
Once cooked and browned remove scallops from hot oil and place on a paper towel lined plate.
Enjoy with tartar sauce and a squeeze of fresh lemon!
