Roasted Garlic Skate Wings with Mustard Aioli

This tasty dish, rich in garlic flavor, features Chatham Harvesters' skate wings, topped with mustard aioli and arugula greens.




RECIPE

Serves 2-4

Ingredients for Roasted Garlic

  • 5 heads garlic, cloves peeled (or 2 cups store-bought pre-peeled garlic cloves)

  • 1 ½ cups olive oil

  • 2 sprigs rosemary

  • 2 sprigs thyme

  • 5 whole peppercorns

  • 1 teaspoon salt

Directions for Roasted Garlic

  1. Preheat the oven to 325°F.

  2. Place the garlic cloves, rosemary, thyme, salt, and pepper in an oven-safe baking dish. Pour the olive oil over the garlic—ensuring the cloves are at least 75% submerged. If needed, use a smaller dish or add more oil.

  3. Bake uncovered for 45 minutes or until the cloves are soft and golden.

  4. Let cool completely before serving or storing.



Ingredients for Mustard Aioli

  • ½ cup mayonnaise

  • 1 tablespoon stone-ground mustard

  • 1 teaspoon honey

  • 2 tablespoons roasted garlic

  • Salt and pepper to taste

Directions for Mustard Aioli

  1. In a small mixing bowl, combine all ingredients.

  2. Mix well until evenly incorporated.

  3. Serve with fries, on a sandwich, or as a dipping sauce. Enjoy!



Ingredients for Arugula Garnish

  • 2 cups arugula

  • 2 teaspoons olive oil

  • â…› teaspoon salt

  • ¼ teaspoon lemon juice

Directions for Arugula Garnish

  1. Place arugula in a bowl.

  2. In a separate bowl, whisk together olive oil, lemon juice, and salt.

  3. Pour over the arugula and toss to coat.



Ingredients for Cooking Skate Wings

  • 1 pound Chatham Harvesters Skate Wings, thawed overnight in the refrigerator

  • 3 tablespoons roasted garlic

  • 2 tablespoons olive oil (preferably from the roasted garlic)

Directions for Cooking Skate Wings

  1. Preheat the oven to 350°F.

  2. Heat a large skillet over medium-high heat.

  3. Add the roasted garlic and olive oil to the pan, heating for 1-2 minutes.

  4. Place the skate wings in the pan and cook for 2 minutes. Gently flip and cook for another 2 minutes, coating the fish with bits of garlic.

  5. Transfer the fish to a baking dish (or use the skillet if oven-safe) and bake for 10-12 minutes.

    • Note: The internal temperature of the fish should reach 140-145°F.

  6. Remove from the oven.



Plating the Dish

  1. Smear a generous portion of mustard aioli onto four plates.

  2. Divide the fish into four portions and place each piece on top of the aioli.

  3. Garnish with the arugula salad.
