RECIPES

SMOKED MACKEREL SALAD SANDWICH 

Makes 4 sandwiches


Ingredients 

  • 1/2 lb  Chatham Harvesters smoked mackerel

  • 1/2 cup  of fresh plain goat cheese

  • 1 small size  apple, peeled, cored and diced

  • 1 small fennel, diced about 1/2 cup 

  • 1 handful chives, thinly chopped

  • 1/2 teaspoon tabasco

  • salt and pepper

  • Microgreens for dressing sandwich 

  • Squeeze lemon juice 

  • Whole wheat bread 

  • 1/3 cup  mayonnaise 


Directions 

  1. Keep only the filets, removing the skin and the bones

  2. Place the fish filets in a bowl

  3. Mix with a fork, the fish, the goat cheese, the apple and the fennel

  4. Add the tabasco, the chives, salt and pepper and mayonnaise 

  5. Mix again well

  6. Serve on toasted (optional) whole wheat and with some microgreens, mayo and lemon juice

  7. Or serve in a bowl as a refreshing salad without the bread 


NOTE: Try this recipe with Chatham Harvesters smoked bluefish  in place of the smoked mackerel


SMOKED MACKEREL, CHEDDAR AND APPLE MELT

Ingredients (Makes 2 Sandwiches):

  • ½ lb Chatham Harvesters smoked mackerel, flaked

  • 1 small apple (Honeycrisp or Granny Smith), thinly sliced

  • 4 slices cheddar cheese (sharp or smoked works well)

  • 2 ciabatta rolls, halved or slices

  • 2 tbsp sweet hot mustard

  • 1 tbsp butter, for grilling

Directions

  1. Prepare the Bread: Spread sweet hot mustard on the cut sides of each ciabatta roll.

  2. Assemble the Sandwich: Layer cheddar cheese, then smoked mackerel, followed by thinly sliced apple, and another slice of cheddar cheese. Close the sandwich.

  3. Grill the Sandwich: Heat a skillet or pan over medium-low heat. Spread butter on the outside of each sandwich. Grill for 3-4 minutes per side, pressing gently with a spatula, until golden brown and the cheese melts.

  4. Serve & Enjoy! Slice in half and serve warm. Perfect with a simple salad or crispy fries.
